e-mail Tom | Hi. as an oyster novice i wonder if someone could point me in the right direction. I know when you buy them they are live but how long can you store them in the fridge for?. Also they appear to be grade im presuming this is quality?.Also what do people put in the meat and shell before eating them.

The quality depends on the oyster that you buy and, of course, that you like. I would order them and collect them, at the earliest, the night before and store them in the fridge. Sometimes you can collect them on Christmas morning, which would be my preferred option.

Clean the outside of the oyster under running water to remove any loose grit or barnacles. Rub the shell with your fingers or use a stiff brush if you have one for this purpose. Hold the rounded side of the oyster in a towel or oven mitt, with the hinge (pointed side) sticking out. This will protect your hand if the oyster knife slips.With the flat side of the oyster up, insert the tip of an oyster knife near the hinge and wiggle it towards the hinge. You only need to insert the knife about 1/2 an inch. Do not use a regular knife to open oysters, as there will be a great a risk of slipping and severely injuring yourself.
